I'm a phan of beginning my mornings with lots of light, colors and not your typical pancakes...
Gluten Free, Dairy Free, Vegan (Without the Honey)
* 1 C Almond Flour
* 3 TBS of Ground Flax
* 1/2 C Coconut Milk (Cream for thicker)
-*OR any yogurt **
* Banana
* Chopped Dates
-* PB/PB2 optional
-* Honey optional but suggested
Syrup
In a bowl mix flour, flax and Coconut **
-* Save half of Coconut ** and mix in small bowl with PB or PB2 and honey if yogurt is plain.
Pour batter into pancake shapes, add chopped dates and banana.
Cook L/MD heat and flip...Top with more dates, the mixed yogurt and honey. Extra berries also optional.

So... there seems to be a dilemma with sour cream being unhealthy. So the fad then began substituting Plain Greek Yogurt.
Well, it gets crazier.

Cottage Cheese.
For you texture people, don't gag yet. It compliments the salsa and guacamole texture.
3 Avocados, mashed
1 C of 3% Cottage Cheese
1/2 C of Salsa
3 TBS Lime Juice
Salt / Pepper / Red Pepper Flakes
Mash it to your desired consistency, serve chilled and side with baked pita chips or vegetables. (Cucumbers are 10/10).
PS. My favorite is on toast with extra greens and a fried egg. Topped with feta and balsamic drizzle. SO good.

I've been experimenting with meatless burger lately and I have found that the Ground Impossible Burger has the most similar taste and texture of real burger except completely CRUELTY-FREE.
1 LB of Ground Impossible Burger
1 Can of Organic Pinto Beans
1 C Yellow Tomatillos (Sweeter)
1/2 C Black Olives
1/2 C Shredded Cheese/Feta
1/4 Head of Lettuce to chop or I use Spring Mix
1 Avocado
Sour Cream or Plain Greek Yogurt to top
Sauté the "burger" with onion, garlic and a dash of salt. I love pinto beans for added fiber and protein so I toss them in towards the end to warm them up, mixing carefully. (I recommend rinsing your beans first to avoid the extra unneeded starch) Add your package of Taco Seasoning and mix well. If too dry, add some water or grass-fed butter (which tastes better). Allow to sit and really marinate while you chop up lettuce, avocado and any other veges you may want to include. Top with shredded cheese or feta and sour cream (or plain greek yogurt).
I shouldn't have to tell you how to make a taco.... it's definitely a DIY recipe!
